Preheat broiler. In a small bowl stir together preserves, vinegar, snipped thyme, red pepper, and garlic; set aside.Rinse fish; pat dry. Cut into 4 serving-size portions. Sprinkle fish with black pepper and salt. Place fish on a greased unheated rack of a broiler pan.
