Here is how you make Marinated Orange Roughy and Pasta:

Add cilantro, salt and pepper to grapefruit juice. Add fish and marinate in fridge for 30 minutes or more. Remove from marinade and discard marinade.I used my George Foreman grill to cook up the fish but you can broil, grill or bake them.Fish is cooked when flakes easily.
