8 oz. Surimi (imitation crab), chopped
4 oz. dry pasta (I prefer Rotini)
.5 cup sliced red pepper
.25 cup Philadelphia 1/3 less fat Onion & Chive Cream Cheese
.25 cup shredded Parmesan Cheese
2 scallions /green onions, separate the white/green parts - sliced
3 cloves of garlic, minced
1 T butter
.5 t seasoned salt
.25 t cayenne pepper (or to taste, I use 1/8 t)


How Do I Make Surimi and Red Pepper Pasta?

Here is how you make Surimi and Red Pepper Pasta:

For this recipe, you need a pot for cooking your pasta & a large skillet for sauting & later - combining in the pasta.After you have brought your cooking water to a boil, cook pasta according to package directions (it s/b roughly 8-9 minutes).In a skillet, melt the butter. Once melted toss in the garlic & sliced white part of the green onions. Saute for one minute or until garlic becomes fragrant. Add sliced red pepper & continue to saute until the red pepper becomes tender - approximately 4 minutes.Add in the cream cheese & lower heat to med-low, to allow cream cheese to melt without drying out. Measure out 1 cup of pasta water at this time to use as needed in keeping this dish creamy.Add Surimi, salt and cayenne & toss til well mixed. Drain Pasta & add to Surimi mix. Add in the green onion & Parmesan at this time & toss until all ingredients are well combined. Again, check the consistency to make sure it is not too dry. If it is - adjust by adding some of the pasta water until desired consistency is reached.Portion out into 2 pasta bowls & serve.Number of Servings: 2Recipe submitted by SparkPeople user RIMAJO.
