Makes 4 servings:Peel and devein shrimp. Set aside.Heat olive oil in large skillet.Sautee garlic and shallots over low heat until soft.Add chicken broth and tomato paste.Add cajun seasoning, basil, and oregano.Add salt and pepper.Stir until smooth.Bring to a simmer.Add red wine and mushrooms. Let thicken for 2-3 minutes. Add shrimp to sauce in a single layer and sautee until pink.
