I came up with this on a whim when my dinner-less dad stopped by one evening, and now it's a regular favorite in my house!Start water boiling for pasta. While waiting for the water to boil, prep your ingredients as indicated in the ingredients list.In an oversized skillet on medium heat, heat the olive oil and cook onions for 2-3 minutes until they about halfway done. Add tomatoes and their juice, garlic, olives, capers, artichoke hearts, Italian seasoning, and salt & pepper to taste. Simmer over medium-low heat to reduce a little bit while the pasta cooks.Cook pasta according to package directions to al dente. Drain and add to pan.Add shrimp to pan and lightly toss until everything is evenly distributed. Continue cooking until shrimp are pink.
