1) Sautee garlic and red peppers in olive oil. After 5 minutes, add scallions and celery, cook 10 more minutes.2) Add Cayenne and peaches. Cook 5 minutes, stirring and breaking down peach pieces with a wooden spoon as you go. Remove from pan and place in bowl. set aside.3) Using the same pan, toss in two swai filets. After a few minutes, flip and cook another 3 minutes or so until just cooked through (fish will break or separate easily).4) Remove fish from pan.
