2 cups cooked and drained rice noodles or angel hair pasta
chopped peanuts for topping (optional)

*You can buy dry peanut sauce at the asian food market or sometimes your grocery store might carry it. I use Asian Home Gourmet brand. I use a small can of coconut milk instead of water to make this sauce.

1. Put water to boil for your noodles. Cook your noodles at the last minute (if they are the kind that cook for only 3-4 minutes). Rinse your noodles and toss with a little oil so they do not stick as much.2. Make the peanut sauce in a small pot according to the instructions on the package. 3. While the sauce is cooking, sautee the shrimps for a few minutes until they become opaque and pink. I like to take the tails off before I cook them. Put aside in a bowl.4. Sautee the snow peas for 3-4 minutes or until bright green.5. Divide the noodles in 4 portions, top with snow peas, shrimps and peanut sauce.6.
