1 pound large raw shrimp, peeled, deveined & patted dry
1/4 to 1/2 tsp red pepper flakes
2 Tbls chopped fresh mint OR cilantro
1/4 cup chopped lighly salted roasted peanuts
Lime wedges

I increased the amount of red pepper flakes because we like spicy food in my family... you may wish to reduce this! ;)

Here is how you make Spicy Peanut-Coconut Shrimp:

1. Toast coconut in small non stick skillet over medium-high heat for 2-3 minutes, stirring frequently. Remove from skillet when golden brown. 2. Prepare other ingredients... chop peanuts, chop cilantro, slice lime wedges, cook rice, etc.3. Heat sesame oil in skillet over medium-high heat. Add shrimp & red pepper flakes; stir-fry 3-4 minutes until shrimp are pink and opaque. Add cilantro; toss well.
