Here is how you make Red Bell Pepper Frittata:

Preheat oven to 350. Bring 1/2 c. water to boil in small saucepan, gradually stir in couscous. Remove from heat, cover and let stand 5 minutes. Fluff with a fork.Combine 1 T. water, salt, pepper, egg whites and egg substitute in a medium bowl, stirring with a whisk.Heat a 10" ovenproof nonstick skillet over medium high heat. Coat pan with cooking spray. Add bell pepper, onion and garlic. Saute 5 minutes. Stir in couscous and egg mixture. Cook over medium heat 5 minutes or until almost set. Sprinkle with cheese.Bake at 350 for 10-15 minutes or until done. Let stand 5 minutes before serving.
