4 (4 oz) Sole filets (Flounder or another white fish filet may be substituted)
1/4 cup All Purpose Flour
1/2 tsp seasoned salt
1 tsp cracked black pepper
1 egg and 1 egg white, beaten
1 tbsp unsalted butter
1 tbsp olive oil
1 tbsp lemon zest
The juice of 2 large lemons
1 tbsp capers


How Do I Make Sole Picatta?

Here is how you make Sole Picatta:

Combine flour salt and pepper in large ziplock bag. dip fish filets in beaten egg mixture, then coat with flour, shaking off excess. Heat butter and oil over medium high heat until sizzling. Cook fish filets in butter and oil, 3-4 minutes per side, until golden brown. (Turn carefully as they break easily!) Remove fish to serving platter and keep warm. Reduce heat to low. Add lemon juice, lemon zest and capers to pan. Simmer for approx. 5 minutes until sauce thickens slightly. Pour evenly over fish fillets.
