olive oil
1 lb. sweet potato, peeled and cut into 1/2" cubes (I microwaved mine for three minutes first to speed up the cooking)
2 leeks, white and pale green parts only, sliced thinly
1 large red bell pepper, chopped
4.5 oz. smoked salmon (the original recipe called for 6 oz., but Whole Foods only sold packages of 4.5 and, I think, 10 oz.)
2 t. fresh dill, chopped (original calls for 4 t., but I don't love dill)
crème fraîche


How Do I Make Smoked Salmon and Sweet Potato Hash?

Here is how you make Smoked Salmon and Sweet Potato Hash:

Heat oil in large skillet over medium heat. Add sweet potatoes, leeks, and red bell pepper and sauté until potatoes are tender, stirring occasionally. Uncover, increase heat to medium-high and cook without stirring until potatoes are brown on bottom. Stir in salmon and dill. Season mixture with salt and pepper. Top each serving with 2 t. crème fraîche.Crème fraîche is not in the Spark tracker. Obviously this would add to the calories a bit or you could leave it out or make a substitution.Not sure about the portion sizes.
