Cut into 1 to 1 1/2 inch cubes. Place in a large saucepan with just enought water to cover, add stock powder and bring to a boil. Reduce heat to low and simmer, covered, 20-25 minutes, or until tender. Drain well.In the same saucepan, mash the potatoes. Add green onions, yogurt, butter and pepper. Beat with a wooden spoon until light an dfluffy. Stir in fresh parsley and serve.I didn't have green onions, so used yellow, and I didn't have fresh parsley so used dried dill. I would try this with fresh dill another time.Serves 4.By cooking the potatoes with skins on, you keep all of the fiber and nutrients while adding texture and flavor.
