Heat oil in large saucepan over medium heatAdd onion and cook for 3 minutes. add garlic, thyme, salt and pepper and cook for 20 seconds. Stir in can of tomatoes and broth. Bring to a simmer. Cover and reduce heat and simmer for 2 minutes. Increase heat to medium, stir in scallops and cook, stirring occasionally for 2 minutes. Stir in shrimp and cook, stirring occasionally for 2 minutes. Stir in quinoa. Cover, and cook until quinoa is done. Fluff, make sure seafood is cooked through and serve.Serving Size:?makes 4 servings
