Cook brown rice and frozen mixed veggies according to package instructions. Mix cooked mixed veggies, drained tuna, sour cream, and soy sauce in a dish. Heat a saucepan with the olive oil over medium heat, then add minced garlic to the pan. Saute for a few minutes until garlic is brown; add sliced mushroom. Saute until mushrooms are beginning to soften. Add tuna/sauce mix to the pan. Stir continuously until hot - do not overcook!!
