Toss toms in 2 tsp oil with a pinch of s&p. Place on a baking sheet and bake 1 hour.ZUCCHINI PUREE: In a medium pan, heat 1 tsp oil on medium heat and cook garlic and HALF the onion until translucent; add zucchini and cook 5 minutes. Place all those ingredients in a blender, add lemon juice and 1 Tbsp. oil and puree. salt and pepper to taste. Set aside.RISOTTO: Heat 1 Tbsp. oil in a medium pot on medium heat and saute remaining onion until translucent. Add rice and cook 2minutes.
