3 cloves garlic
1/4 cup sun dried tomatoes
1 tsp. red pepper flake
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. pepper
2 lbs peeled shrimp tails off
12 oz. good feta cheese
2T dried parsley
lemon zest from one lemon
1 lemon worth of juice.

Preheat oven to 400.Heat 2 T olive oil and 2 T butter in heavy oven proof skillet. Add diced fennel and saut? 10-12 min until tender. Add sun dried tomatoes and Add garlic. Saut? 1minute. Add wine and bring to boil. Cook 2-3 mins and scrape brown bits. Add canned tomatoes, tomato paste, oregano, 1teaspoon red pepper flake, salt and pepper. Simmer 10 minutes. Arrange shrimp on top of tomato mixture, spread feta over shrimp, sprinkle parsley, and 1 tsp. lemon zest.Bake 25 minutes until the shrimp are cooked. Squeeze juice of 1 lemon over the shrimp.
