1 tsp dried oregano
1 Tbs Pernod
1 tsp kosher salt

1 pound shrimp, jpeeled witgh tails on
5 oz good quality feta, coarsely crumbled
1 cup bread crumbs made with 4 slices of bread
3 Tbs minced fresh parsley
1 tsp grated lemon zest
2 lemons

Here is how you make Roasted Shrimp with Feta:

Preheat the oven to 400Heat 2 Tbs of olive oil in a 10 or 12 inch heavy oven-proof skillet over medium-low heat. Add the fennel and saute for 8 to 10 minutes, until the fennel is tender. Add the garlic and cook for one minute. Add the wine, birng to boil, scrape up any brown bits, and cook for 2 to 3 minutes to reduce liquid by half. Add the tomatoes with the liquid, tomato paste, oregano, pernod, salt and pepper to the skillet. Simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes.Arrange shrimp, tails up, in one layer over tomato mixture in skillet, Scatter feta evenly over the shrimp. In a small bowl, combine bread crumbs, parsley, lemon zest, and 2 Tbs of oil. Sprinkle over shrimpBake for 15 minutes till shrimp are cooked, and bread crumbs golden brown.
