2 cans tuna packed in water
1 lb. red potatoes
1.5 lb. green beans (raw - DO NOT USE CANS!)
.5 cup chopped or thinly sliced red onion
4 hard boiled eggs
1 cup halved small tomatoes, either cherry or smaller
about 15 kalamata olives, chopped roughly
4 T capers
a few T of lemon juice
about 4 T of olive oil
salt and pepper to taste

Here is how you make Easy Nicoise Salad:

Boil potatoes until soft in the middle. Cool and cut into bite-sized chunks. Prep green beans - cut off both ends and cut into 1.5 inch lengths, then steam or boil them for about 4 minutes until very green. Drain and add to cut potatoes. Add chopped or sliced onion, tomatoes, kalamata olives, capers and mix. Add lemon juice, olive oil and salt and pepper to taste.
