1 lb-Salmon fillets-4 oz portions
2 cups red potatoes-cooked and cubed into 1 ? chunks
2 cups fresh green beans-trimmed and cut diagonally into 3 ? pieces
? cup green onions-sliced diagonally
Salad greens


Dressing:
? cup soy sauce
? cup seasoned rice vinegar
? cup canola oil

Aioli:
? cup light mayo
1 TBL Wasabi powder
2 cloves garlic-crushed garlic

Here is how you make Grilled Salmon Summer Salad w/ Wasabi Aioli:

Salad:Grill Salmon fillets until just done, 15-20 minutes.Cube raw potatoes into 1" chunks and boil in salted water until fork tender. Do not over cook. You want them to remain firm. Trim green beans and cook in salted water until fork tender. Remove green beans from water and submerge into ice bath to stop cooking and retain their green color. Let cool and cut into diagonal 3 " pieces. Slice green onions diagonally. Dressing:? cup soy sauce? cup seasoned rice vinegar? cup canola oilMix all ingredients together and whip until well blended. If you don't have seasoned rice vinegar add 1 tsp sugar to dressing. Aioli:? cup light mayo1 TBL Wasabi powder2 cloves garlic-crushed garlicMix all ingredients until very smooth.Assemble:Toss salad greens, green bean, potatoes and green onions in dressing. Top with salmon fillets. Place wasabi aioli into plastic sandwich bag, and use like a pastry bag. Squeeze aioli into corner of bag and clip a very small corner from the bag. Filigree (lie a paint brush) aioli in stripes on top of salmon. Serve at room temperature or chilled.
