1/2-3/4 Box of Organic Spring Mix
1 C. Chopped Romaine lettuce
Small Avacado (without seed and skin)
1/2 C. Cherry Tomatoes (halfed or quarted)
1/3 Cucumber (very thinly sliced)
2 slices Red Onion (very thinly sliced)
2 Tbs Grated Parmesan-Romano (or Three Cheese)

Here is how you make Blackened Shrimp Salad:

Makes(4) 1.5-2 cup servingsMix shrimp with seasoning and cook in non stick pan in olive oil for approximately 3 minutes on each side on Med-Med High heat. Move shrimp to cooler side of pan and add strips of bell pepper cooking al dente. Set aside to cool a bit. Put lettuce in large bowl and top with other ingredients.
