5 oz (50g) mixed sweet pepper strips (red, green, or yellow)
1 hot pepper, seeded & finely chopped
1 scallion, trimmed and thinly sliced
2 tbsp soy sauce
1 tbsp white wine vinegar
1 tbsp chopped mixed fresh herbs (eg. cilantro, basil & parsley)
2 small (5 oz, 150g) fresh tuna steaks
2 tsps olive oil
salt and pepper
fresh basil leaves, to garnish

Cook lentils in chicken stock with a few veg (carrots, celery, onion, garlic) and a bay leaf.Put cooked lentils in a pan and warm slightly.
