Preheat oven to 375 degrees.In an oven safe pan, saute asparagus, onions and peppers in olive oil, when they are cooked to your liking, add tomatoes and spinach and cook until spinach wilts.In a separate bowl, whisk together eggs and almond milk and add to pan.
