Saute on medium high heat until onions are transparent. Cut salmon into 4 servings and season with kosher salt and freshly ground black pepper. Place in skillet and add chicken stock. Cover and simmer until salmon is just cooked through (about 5 minutes, depending on thickness of filet). Meanwhile, toss together breadcrumbs, blue cheese and mozzarella cheese. (If you don't have panko bread crumbs, use dried regular crumbs) Remove filet from skillet and place on heated broiler pan.
