Place salmon chunks in a large bowl and add chili mixture and cover. Refrigerate 30 minutes or up to 6 hrs. Wrap tortillas in foil and place in oven for 15 min to warm. Cook salmon on a griddle or in a large nonstick skillet on med. high with 1 T olive oil. Cook salmon in batches for 1 min per side or until light brown.
