1/8 tsp annatto
2 lbs salmon fillets sliced into 1/2 inch chunks
1 1/2 tsp salt
1 small yellow onion sliced
1 small green bell pepper sliced
1 small red bell pepper sliced
2 T sliced scallions
8 flour tortillas (or whole wheat low carb tortillas) (calorie count is for flour tortillas)

Here is how you make Salmon Fajitas:

in a small bowl, combine 1/4 cup of olive oil, lime/lemon zest, chili powder, Mexican oregano, cumin, coriander, annatto, salt and pepper. Place salmon chunks in a large bowl and add chili mixture and cover. Refrigerate 30 minutes or up to 6 hrs. Wrap tortillas in foil and place in oven for 15 min to warm. Cook salmon on a griddle or in a large nonstick skillet on med. high with 1 T olive oil. Cook salmon in batches for 1 min per side or until light brown. In a separate non stick skillet heat 1 T olive oil, add peppers and onions and cook until soft and slightly caramelized for 12 to 15 min.Divide salmon among the tortillas and top with vegetables.
