Here is how you make HealthierJo's Salmon Patties:

Drain salmon and flake with fingers, pulling out any fine bones. Mix salmon with mashed potatoes and beaten egg. Add onion, parsley and lemon zest. Season with black pepper. If the mixture feels too sloppy or wet, add a little flour before making patties. Form eight patties and refrigerate for 30 minutes. Dust patties with flour and fry in 2 tablespoons olive oil over medium-high heat for 3 to 4 minutes on each side, until crisp and golden. Drain on paper towel.
