Salmon Cakes:
Trader Joe's wild pacific salmon, 12 oz (cooked)
Egg, fresh, 2 jumbo
Chevre Soft Goat Cheese, 2 oz
1/2 oz Trader Joe's Pecorino Romano & Parmesan Blend PLUS
1.5 tbsp Trader Joe's Pecorino Romano & Parmesan Blend
Orange peel zest from one large orange
Garlic, 4 cloves minced
1 tbsp fresh Cilantro, chopped
1/4 cup Red Onions, dehydrated flakes
5 tsp Grey Poupon Dijon Mustard
1 tsp dry mustard powder
2 generous squirts of hot sauce
1/2 tsp salt
1/2 tsp Season All (didn't have Old Bay!)

Coating:
1 oz Stella Aged Asiago Cheese
2 tbspParsley
1/2 tsp Black Pepper
Trader Joe's Pecorino Romano & Parmesan Blend, 1.5 tbsp


How Do I Make Asiago and Pepper-Crusted Salmon Cakes-Adjusted?

Here is how you make Asiago and Pepper-Crusted Salmon Cakes-Adjusted:

Makes 4 servings.Preheat oven to 425 degrees (middle rack) and line a baking pan with parchment paper. Mix all salmon cake ingredients in a large bowl. Assemble coating ingredients and set aside. (I didn't read Rebecca's instructions at this point...was in a hurry to go out so I just made 4 large patties instead of the 8 smaller ones. Eight smaller would be WAY EASIER to work with! Dip each cake in the coating, turning over and patting well to set the cheese into the patty. Carefully set down each cake on the parchment paper-lined baking sheet. Each cake sould look like a burger, nicely shaped, and should have room around it.Place baking tray in oven for 10 minutes. Check for browning on bottom. When patties have browned nicely, gently flip over and bake another 10 minutes on the other side. They should be nicely browned on both sides, firm and easily handled. I cooled them on a cooling rack and ate them without any topping, although the original chef suggested a remoulade or aioli, or a low-carb bun or atop a green salad. My serving was one LARGE cake; hers was 2 smaller cakes...the recipe makes 4 servings.Number of Servings: 4Recipe submitted by SparkPeople user MARYT307.
