Cut the tops from 4 red bell peppers. Clean out seeds. Microwave for 4 minutes on high to soften very slightly. Tear bread into small pieces. Mix the pieces with salmon, beaten eggs, cocktail sauce and lemon juice. Stuff the pepperswith mixture and top with pesto. Replace tops of peppers. Bake at 400 for 20 minutes.
