The ingredients for SALMON PITA POCKETS are:

1 can salmon, drained
1 Tbsp mayonnaise
1/2 stalk celery, finely diced
1 green onion, thinly sliced
1 Tbsp fresh dill (optional)
Generous squeeze fresh lemon juice
2 whole wheat pitas
8 slices cucumbers
2 leaves romaine lettuce, shredded

Mix together salmon, mayonnaise, celery, onion, dill (if using) and lemon juice

Cut pita pockets in half and open up pockets.

Spread about 2 Tbsp of salmon mixture inside each pita pocket on one side only. Place 2 cucumber slices on top of salmon. Fill each pocket with shredded romaine lettuce.

To make this into a lunch, serve with fruit and a glass of milk.
