1. Preheat oven to 500?F. Line a rimmed baking sheet with foil. 2. Heat 1 tablespoon oil in a large cast-iron skillet over high. Sprinkle fillet evenly with 1/2 teaspoon salt and 1/2 teaspoon pepper.
