The sodium level is really high because I didn't factor in the fact that you soak the fish for a few hours before cooking (which would remove the bulk of the salt). If you are short of time, you can soak the fish for a shorter period using warm water and changing the water multiple times.Cut or tear up salt cod into bite size pieces. Put in bowl and cover with water. Soak for a while, changing the water if possible a couple of times. Drain for cooking.Put potatoes in large pot. Cover with water. Bring to boil. Boil for about 5 minutes. Add drained cod to pot and cook along with potatoes until the potatoes are tender.Meanwhile, saute onions in a skillet using chicken broth to prevent sticking. Continue until soft.Once potatoes are soft, pour off water. Add onions to pot and stir to combine fish, potatoes and onions.
