Here is how you make Seared Scallops w/Parsley-Thyme Relish:

1. Mix all ingredients for relish and put aside.2. Sprinkle scallopsd with 1/4 tsp salt and 1/4 tsp pepper. Heat 1 1/2 tsp oil in a large non-stick skillet over medium-high heat. Add half of the scallops to pan; cook 2 minutes on each side or until done. Remove from pan. Repeat procedure with 1 1/2 tsp oil and remaining scallops.
