Here is how you make Karen's Shrimp Quesdilla:

Spray grill with olive oil Pam.Place pepper strips and shrimp together onto grill. Close lid and allow to cook about 1 - min.Remove from grill and set aside. Spray tortilla with olive oil Pam. Fill with shrimp and red pepper strips, fold tortilla over filling and close grill. Brown for 1 minute.Open and place 1/2 cheese slice on top, fold tortilla back over and remove from grill. Makes one very satisfying serving. Enjoy.
