Here is how you make Creamy Spiced Shrimp Over:

Prep vegetables and shrimp. In large skillet with sides saute all vegetables, except spinach, to desired doneness in olive oil and red pepper flakes. If it seems dry add a little reduced sodium stock from a box to help. Add garlic, spinach and dried herbs. Stir until fragrant. Add ricotta and stir until melted and creamy then add tomatoes (again if it seems dry add stock). Simmer while you prepare the "spagetti". Add the shrimp, stir to coat and turn off the heat under the tomato, vegetable and shrimp mixture. Do not remove from burner! Put the lid on and the residual heat should cook the shrimp to perfection. (if you prefer you can continue with heat source on until shrimp cooked through). Add the "spagetti" to mixture, stir, plate and garnish with parmesan.Serving Size:?4 generous servings
