Drain on paper towels and crumble when cool. Heat the remaining 1 tablespoon oil in the skillet, and cook the onion, bell pepper and celery for 5 minutes, or until tender. Stir in garlic and cook for 1 minute. Add tomatoes (and their juice), bay leaf, black pepper, Worcestershire sauce, liquid smoke, and hot pepper sauce and heat to boiling. Reduce heat to low and simmer for 20 minutes. Add shrimp and bacon and cook for 10 minutes, or until heated through.
