One cup cherry tomatoes, quartered
Two cups of fresh spinach, coarsely chopped
1/4 Tsp of pizza seasoning or other Mediterranean spice blend
1/2 cup of reduced fat feta cheese

Here is how you make Greek Style Shrimp Penne:

Pre-heat your oven to 400 degrees. Set a pot of water to boil for your pasta.Once the water is boiling, add in the pasta. It will take 11-13 minutes to cook. Put your cleaned shrimp on a cookie sheet, spray with olive oil cooking spray and season with pepper.Meanwhile, heat olive oil in large pan. Saute onion on medium high heat until translucent. Add garlic and saute until golden. Stir in artichoke bottoms, tomatoes and spinach. Season with pizza seasoning and stir.Meanwhile, put shrimp in the oven. Check frequently - when they are opaque and the tails curled in, they are done! It should take no more than five minutes, and you don't want to overcook them.Drain pasta, and stir pasta into veggies.
