The ingredients for Shrimp Quesadilla are:

1 lb. raw shrimp chopped into rather large chunks.
1 small onion
1 small can of diced chilis
1 small can of corn
1 Tblsp. chili powder
1 tsp. salt (Or to taste)
2 Tblsp. olive oil
1 tsp. cumin
1 tsp. sugar or sugar subsitiute (May leave out if you wish)
1/2 tsp. freshly ground black pepper (Or to taste)
1/2 tsp. red pepper (hot) You can leave it out if you prefer.
1 Tblsp. tomato paste
4 large flour tortilla's
non stick cooking spray
2/3 c. reduced fat shredded "mexican" seasoned cheese. (Do not use no fat cheese as it does not melt well for the receipe)
Reduced fat sour cream
Diced fresh tomatos
Diced onions
1 fresh advocado (mashed with salt and pepper to taste)
Aluminum foil


How Do I Make Shrimp Quesadilla?

Here is how you make Shrimp Quesadilla:

Set oven to 350 degrees.Spray baking sheet with non stick cooking spray.Peel and devein 1 lb. raw shrimp. Cut into about 1/2 inch pieces. Set aside1 small onion diced. Set aside1 small can diced chili's; drained and set aside1 small can corn. Drained and set aside.In a large skillet; heat 2 Tblsp. olive oil.Saute diced onion until just translucent.(Add in the sugar here to help with the caramelization of the onions)Add cumin and chili powder. Saute for about 30 seconds.Add in the tomato paste and sugar and saute for another 30 seconds.Add in the drained chilis and corn. Saute for about 1 minute.Remove form heat and add in the raw shrimp. Add salt, pepper and red pepper.Place 2 tortillas on prepared baking sheet. Top with 1/2 of shrimp mixture. Top with 1/2 of the mexican seasoned cheese. Top with 1 of the remaining tortillas. Repeat. Cover cooking sheet with aluminum foil.Place in preheated oven for about 15 minutes.Uncover and back for another 5 to 10 minutes.Divide into 4 to 6 portions.Serve with sour cream, tomatos, mashed advocados and diced onions.Number of Servings: 1Recipe submitted by SparkPeople user DEBBYLOVESBUDDY.
