Here is how you make Spinach and Egg Breakfast Saute:

Makes one serving. Heat olive oil over medium heat in a non-stick pan ( a flat bottom wok works very well) Saute mushrooms for 2-3 minutes until soft. Add spinach and salsa and saute until spinach is wilted, about 2 min. Push veggie mixture to side of pan, spray bottom with cooking spray. Crack one egg in pan and cook about 1 min, turn over easy to cook for 1 more min. Remove veggie mix to serving dish and top with egg. Salt and pepper to taste.
