1 slice turkey bacon, cooked

Here is how you make Spinach and Egg Scramble:

1) Lightly spray a microwavable container with canola or olive oil so the egg mixture won't stick. 2) Microwave frozen spinach, measure out 1/2 cup, press liquids out of the spinach so it doesn't water down the egg mixture and put in container. Measure the spinach before you drain it or you'll have too much spinach in the mixture. 3) Add eggs. 4) Crumble bacon into egg and spinach mixture and stir mixture with fork or spoon to distribute evenly.5) Microwave on High for 1 minute, remove, stir, and microwave again for c. 30-45 seconds or until the mixture looks cooked through.6) Once cooked, remove, add the slice of cheese, cover container, microwave for 15 seconds and it's ready to go.
