Pre heat broilerHeat oil and spread in a 4" cast iron or other oven proof skillet, medium heat. Add thyme, onions, peppers and garlic; sautee until soft. Add spinach, cook until just wilted. Pour in egg substitute, sprinkle Mrs. Dash over mixture, top with crumbled feta cheese. Cook on top stove 5 minutes.
