Here is how you make Spinach Frittata:

Turn oven to broil.Combine eggs, salt, pepper and hot sauce in small bowl. Set aside.Heat olive oil over medium heat in a small teflon skillet. Saute garlic and shallot in oil until they begin to soften (2-3 minutes). Add spinach, turn up heat and toss the spinach until it is wilted. Turn heat back down to medium low and spread spinachly evenly over the bottom of the skillet. Pour egg mixture evenly over spinach so that it covers the bottom of the skillet. Top with cheese.
