Add spinach, turn up heat and toss the spinach until it is wilted. Turn heat back down to medium low and spread spinachly evenly over the bottom of the skillet. Pour egg mixture evenly over spinach so that it covers the bottom of the skillet. Top with cheese. Cook on stove top until bottom is set.
