* Feta Cheese, 0.33 cup, crumbled (remove)
* *Daisy Light Sour Cream, 4 tbsp (remove)
* Yogurt, plain, low fat, .12 cup (8 fl oz) (remove)


How Do I Make Potato Crusted Spinach Salmon Quiche?

Here is how you make Potato Crusted Spinach Salmon Quiche:

Serves 4Preheat oven to 350.Thinly slice potato with a mandolin. Line the bottom of a pie tin sprayed with cooking spray with the potato slices, overlapping where necessary. Bake in the oven for 20 minutes or until potatoes are softened. When finished, remove from oven.Wash spinach, but do not dry completely. Wilt in a large skillet. Remove, drain and set aside.In the same skillet, cook sliced onion until softened. Remove from heat and set aside.In a bowl, mix together 1 egg and 4 egg whites with sour cream, yoghurt, salt and pepper. Set aside.Open the can of salmon and discard bones and skin.Top the potatos with the spinach, then onion, then salmon. Pour the egg mixture over everything. Sprinkle the feta cheese on top of everything.Bake at 350 for 30 minutes or until the quiche has set and the cheese is slightly browned.*Before adding the cheese, I like to top the quiche with fresh herbs.
