Add 1/4 cup finely chopped dill and about 1 tbsp juice of lemon, mix well. Place compound butter on small piece of plastic wrap, roll into a 3 inch tube and place in the freezer.Spread out spinach on the bottom of a piece of foil. Sprinkle with salt and pepper add a few shallots and leeks. Rest salmon fillet over top (skin side down). Sprinkle additional leeks and shallots over top, salt and pepper.
