1 can (28 oz) tomatoes, including juice
3 cups stock
1 c red lentils, rinsed
1 c millet
1/4 t cayenne, dissolved in 2 T lemon juice
salt, optional
1 lb frozen spinach, or 1 package (10oz) of frozen spinach thawed
1/4 c cilantro leaves
coconut milk or plain yogurt, optional

Here is how you make Spinach Dal with Millet -- slow cooker:

In skillet, heat oil. Add onions and cook until softened. Add garlic and gingerroot and cook for 1 minute. Add turmeric, peppercorns, bay leaves, and cumin and coriander. Cook 1 minute. Add tomatoes with juice and bring to a boil. Add to slow cooker. Add stock, lentils, and millet and stir well. cover and cook on LOW for 10 HOURS, or on HIGH for 5 HOURS, until lentils are tender. Stir in cayenne solution and add salt to taste. Add spinach, in batches, stirring often until all leaves are submerged. Cover and cook on HIGH for 20 minutes, until spinach is tender. Discard bay leaves.
