Here is how you make Spinach-Stuffed Mushrooms:

Wash the spinach in plenty of cold water to remove any grit. Transfer the spinach to a large pot with just the water left clinging to the leaves. Cover and cook until wilted, about 5 min. Drain and let cool. Squeeze out excess moisture and chop finely.carefully separate the stems from the mushrooms. Place the caps, stem-side up, in an oiled baking dish.In a large nonstick frying pan, saute the onions in the oil until soft.Finely chop the mushroom stems and add to the pan with the onions.
