This recipe is an attempt to duplicate the Mt. Vernon Stable Restaurant in Baltimore's special of the day I had. It was so delicious I couldn't stop thinking about it. I used Garlic and Herb low carb tortillas for mine. The sodium in this recipe came out fairly high. Will have to see if substituting a different brand of sun-dried tomatoes and cheese will help lower it. All suggestions are welcome!

Lightly spray frying pan with cooking spray. Place one tortilla in pan and then layer a bit of cheese, spinach, sun-dried tomatoes and crab, topping it off with the rest of the cheese.
