3 T. Lemon Juice
2 lbs Catfish (3 filets)

Here is how you make Lemon Thyme Stuffed Catfish:

Put all ingredients, except Fish, in small bowl. Mix to combine thoroughly (I like to use my hands to make sure it is moist all the way through). Lay out filets and divide stuffing evenly on each. Spread out the stuffing and roll each filet. Hold ends in place with toothpick (optional) and lay seam side down in loaf pan. Bake on 350 degrees for 15-20 minutes. Let stand 5 minutes.
