Drain pineapple, reserving 3/4 cup liquid. For sauce combine reserved pineapple juice, brown sugar, ketchup, soy sauce, vinegar, orange juice and cornstarch. Set aside. Add 1-2 TBS. of oil to a large skillet; preheat over medium high heat. Stir fry the sweet pepper for 1.5-2 minutes or till crisp tender. Remove from skillet. Stir fry half of the fish for 3 to 5 minutes, or till fish flakes easily with a fork; remove. Stir fry remaining fish; remove. Stir sauce; add to skillet. Cook and stir till thickened and bubbly. Stir in pineapple, sweet pepper and fish. Heat for several minutes. Serve over rice.
