Preheat oven to 425 degrees.Cut the tops off the mini peppers and GUT 'EM! Place the gutted mini peppers in boiling water for at least 2 minutes.While those are boiling, nuke the Uncle Ben's and get 1/2 cup ready to stuff the peppers with by mixing in alllmost 2 Tablespoons of the cheese.Remove the peppers and make sure they are drained of all water, dry outside. Stuff each pepper with approximately 1/4 of the mixture (or 1/8 cup each). Bake in the oven for about 8-10 minutes, pulling out 2 minutes before the end of cooking to add the remaining cheese on the outside of the pepper as decoration.
