Serves 41) Preheat oven to 400. Place spinach in pan with just the water ahering to leaves after washing. Cover with lid and cook gently for 3-4 minutes until leaves are just wilted. Drain in colander and press with back of spoon to get excess moisture out.2) Mix spinach with lemongrass, garlic and ginger.3) Combine coconut milk, lime juice, sugar and seasoning in a bowl. Place fillets in shallow baking dish and pour coconut milk mixture over it.4) Bake trout for 20-25 minutes until cooked.
