Tilapia fillets How Do I Make Southwest-style Poached Tilapia?Here is how you make Southwest-style Poached Tilapia: Step 1: In a large pan, heat the olive oil and saut? the garlic for about a minute. Add the bell peppers and onion and saut? for about 3 minutes or until the onion begins to change color. Remove vegetables from the pan. Step 2: In the same pan, heat the tomato sauce, diced tomatoes with chilies and the cilantro (or ground coriander) on medium heat. When it comes to a boil/simmer, add the ground red cayenne, salt, and pepper to taste and bring to a full boil for 2 minutes, stirring so as to blend the flavors.Step 3: Remove the pan from the heat and add the fish and vegetables to the tomato sauce. Return to the heat and bring the sauce to the boil again. Reduce the heat and cover. Simmer very gently for about 5-10 minutes, or until the fish is tender.
